Raclette is very social meal and makes a terrific dinner party for your family and guests. Using a tabletop raclette oven or grill, each person at the table heats an individual portion (¼” slice) of cheese in a small tray. In about one minute, the cheese will melt and start to bubble. Remove tray from the oven and scrape the cheese over a boiled new potato. Season with fresh ground black pepper and enjoy. Traditionally sour gherkins and small pickled onions are served with the dish. Hot tea, dry white wine, and Pilsner beer also are favorite companions. There are many modern variations of the raclette theme.
